Things That Make Me Say Yeay

Easter egg hunting after math, which is always the best part when you're a kid.  On Wednesday a couple of my girlfriends and I got all our boys together for a fun Easter themed playdate and all the kids had a blast!

The most beautiful bunch of flowers for my Easter table.

My favorite salad from an awesome local place called The Goat and Vine.

Dark chocolate espresso beans, which are my current afternoon guilty pleasure.

Camping essentials. Today we are headed out for a family camping getaway, and we are all so excited!  We are going to ride bikes, hike, chillax, and roast plenty of s'mores of course.  Spring break is in full swing over here and we are soaking every minute of it up.  I will be sharing pictures of our camping adventures over on Instagram if you want to follow along.

Have an awesome weekend!

No Bake Strawberry Cream Bites (Paleo)

Monday, March 21, 2016

You can always tell that spring is in full swing when the cutest little strawberry stands start to pop up all over my town.  The boys have been begging me for a flat, so we picked up some last week and they were the sweetest and juiciest strawberries ever!

Since strawberry treats are some of my fav (like these Raw Strawberry Cheesecake Bites) I knew I had to make something yummy with them.  I have been working on perfecting this recipe for a little while now and I can proudly say it's now perfected.  These are basically like strawberry crack balls...so addicting!  They are sweet, creamy, and taste exactly like a strawberry shortcake rolled up into a bite sized frozen treat.  You're gonna wanna make these asap.

What you will need:
  • 2 cups of chopped strawberries (plus a little extra for garnish)
  • 1 cup of coconut butter -- you can buy this at a health food grocery store or easily make it yourself with this recipe
  • 2 tbs honey
  • 1 tbs coconut flour
  • 2 tbs of chopped almonds for garnish (optional)
Directions:
  1. Combine all of the ingredients above into a food processor or high powered blender.
  2. Blend until you have a creamy consistency.
  3. Roll together small bites and place on a parchment lined cookie sheet or silicone baking mat.
  4. Sprinkle chopped almonds and finely diced strawberries on top.
  5. Place in the freezer for about 30 minutes to harden up.
  6. Enjoy!
These treats are best enjoyed cold, so keep any leftovers in the fridge.

These bite sized strawberry treats are absolutely addicting!  Make sure to come back and let me know if you make them!

Things That Make Me Say Yeay

My sister Natalie and I at her baby shower. It was a beautiful day and I was so happy we got to spend tons of time together before she headed back to Germany this week.  The dress that I am wearing is one of my current favorites and it can be found here.

Max reading to his little brother at breakfast the other morning. This just about melts my hearts.

A super rad phone case called the jimmyCASE, which makes life so much easier for me since it holds up to 6 cards plus cash.  Each case is handmade with love by skilled artisans in Los Angeles, California and there are so many fun color options to choose from!

Baseball season started and Max is on the Dodgers! WOOHOO! Since we are huge Dodger fans in real life we were all beyond pumped that he gets to represent our team this year.

The bathtub of my dreams is finalllllllly installed in our master bathroom. We encountered every single problem imaginable with this thing, but in the end I am so glad I stuck with my original design choice and didn't change a thing despite all the hurdles.  I will also share the full after of our master bath soon!

Have an awesome weekend!

Flourless Lemon Cashew Cookies

Monday, March 14, 2016

Oh how I love a good lemon treat!  I was having a major need to satisfy my lemon dessert craving this past weekend and this recipe did the trick.  Plus these super soft cookies take like zero time to make since you just toss everything into a blender and then bake.  So in-between baseball games for Max and house projects, I whipped these delicious babies up in almost no time flat.

What you will need:
  • 1 cup of cashew butter
  • 2 tbs of almond meal
  • 1/2 cup of honey
  • Juice from one lemon
  • Zest from one lemon
Directions:
  1. Preheat oven to 350 degrees
  2. Place all of the ingredients into a high powered blender (I love my Ninja Blender) and mix until you have a smooth consistency.
  3. Line a baking sheet with parchment paper and drop rounded tbs size cookies onto the sheet. The batter will be super sticky but thats normal for this recipe.
  4. Bake for 12 minutes.
  5. Once they are cooled, add a little extra lemon zest on top for presentation and enjoy! :)

These are super soft and the cashew and lemon are basically the perfect marriage for a light, spring time cookie. If you make these make sure to come back and let me know what you think!

Getting all the stuff out and ready for my sister's, "Greatest Adventure" shower that I am throwing for her this Saturday.  She has flown all the way from Germany so we can celebrate, and it's going to be such a special day!

One of my favorite desserts in candle form, which is to DIE FOR.

The iRobot Roomba.  We got this during Christmas and I love it!   It goes under the bed, transitions from carpet to tile, gets under the dressers, and leaves my house spotless whenever it's on.  I am 100% on board with things that make my life easier.

We decided to hold off on getting a new deck and instead give our old deck a fresh coat of white paint.  Good as new :)

A heart shaped cactus the boys discovered on our property.

Have the best weekend!

Our Spring Garden

Tuesday, March 1, 2016

Every year the boys and I look so forward to getting our garden started.  It's always fun to get everyone's input of what we are going to plant that particular year.  Since it's an all day event we put on old clothes, lather up in sunscreen, blast some awesome music, and enjoy cold beers when all the work it done.  It's never a bad day that's for sure.

This year felt pretty special since it's the first garden planted in our new home.  Here are a few pictures from our day...

We planted strawberries, cucumbers, cherry tomatoes, baby bell peppers and swiss chard.  Fingers crossed that everything kicks butt and produces like crazy!
