The 2 Minute Paleo Vanilla Cupcake with Chocolate Frosting (nut free)

When I am in the mood for something sweet there is nothing more torturous than having to wait way too long for that something delicious to cook.  Plus, most of the time I end up eating way more than I should and I feel guilty about it later and blah blah blah.  SO that is why single serving desserts are sometimes the best way to go. It basically solves all of your problems in just two quick microwaving minutes.  Or in this case one minute and 45 seconds and then a cupcake awaits!

The other night I was perusing ( I have been loving and overusing this word lately) my cupboard for something sweet and terrible for me.  Since I do all the grocery shopping I should have realized that it was a dark hole of only healthy options and if I wanted something sweet I would have to create it myself.  I did a little experimenting and this vanilla cupcake for one was a-freaking mazing according to my husband who I ultimately had to share it with. Darn.

What you will need for the cupcake:
  • 1 rounded tbs of coconut flour 
  • 1/4 tsp of baking powder
  • a dash of sea salt
  • 1 tbs of honey 
  • 1 egg
  • 1 tbs melted ghee
  • 1/2 tsp of vanilla extract 
What you will need for the frosting: (make this you will not regret it) 
  • 1 tbs of unsweetened cocoa powder
  • 1 tsp of honey
  • 1 tsp of coconut oil 
Directions for cupcake:
  1. Combine all of the ingredients into a microwave safe mug or bowl. 
  2. Thoroughly (put some forearm muscle into it) mix all of the ingredients together until you have a smooth batter like consistency. 
  3. Microwave for 1 minute and 45 seconds.
 Directions for frosting:
  1. Add all of the ingredients together in a microwave dish. 
  2. Microwave for about 20 second or until fully melted.   
  3. Mix thoroughly until you have a smooth consistency. 
  4. Pour it hot over your cooked cupcake.  If you want a more frosting like consistency place it in the fridge for about 5 minutes. 
  5. Enjoy!

Wow! I am impressed at how good this is! Definitely the best healthy "treat" I have had!!!! YUM!!! I may have to find a sub for the honey if that's possible? I have blood sugar issues and I think honey is high on the glycemic index.

Wow... I made this right now as a snack between breakfast and lunch (because why not?) and it was DELICIOUS! I honestly didnt think it would taste as good as the chocolate mug cake you've posted. My new favourite treat for sure... and you're right, the frosting is way too good to not make! Delicious!

I followed most of this recipe, but used melted butter in place of the ghee. Less healthy, yes. But still super delish!! The 1:45 time was perfect. Thanks for sharing! This will be in my craving cure rotation now. :) -Melissa

Just made this today and it turned out perfect! I used coconut oil instead of ghee. My 5 year old son was so excited and happily ate the whole cupcake :-).

I was skeptical at first but after reading the reviews I decided to try it, I gave it to my husband and kids to try and they made me make three more. I added some mini dark chocolate chips to the other ones and it was amazing. THANK YOU SO MUCH FOR THIS RECIPE.

I made this tonight and it was so good! Even my hubby really liked it. Although I used butter instead of ghee and I forgot to add the salt but it still came out well. Yours looks WAY better than mine. Would using butter suffice or should I try it with ghee next time? My frosting came out clumpy though. Not sure what I did wrong there. Any pointers to perfect it next time?

This is the best Paleo cupcake in the history of ever ! I could not believe how good this is! And absolutely the icing is a must-- I even used walnut oil because I was out of coconut oil. It was amazing thank you so much!

I made this today- thanks for sharing! I'm not proud to say I made it twice. The second time, I subbed applesauce for the coconut oil, and used 1/4 teaspoon of almond essence instead- it was a delicious coconut/apple cake :)

I've made the Blueberry Muffin and Chocolate Mug cakes and they were both super yummy. When I read this recipe, I got confused with measurements. Usually tablespoon is represented with a capital T or Tbsp and teaspoons as tsp with no capital. Had to look super close at the recipe since it uses tbs and tsp. Now that I am clear on the measurements, I'm sure this will be as yummy as the other two! I'm having friends over tonight and plan to make a few different variations for us to try!
