Salted Almond Butter Chocolate Chip Cookies (Paleo)

My first adult Vegas trip (that one time I went with a 7 week old Max does not count) was awesome!  I flew out on Wednesday to meet up with the husband who was there for work and was back on Friday.  I ate some of the best food I have ever tasted and drank way more martinis and gimlets than is probably considered healthy but you live and learn and pay for it later ha.  Let me just say that two days in Vegas is plenty though.  Any more than that and you might need a total alcohol and food detox.  Just sayin.  So in honor of my no alcohol for at least a week and healthy eating only plan that I started yesterday...I decided to make these freakin outstanding cookies.  Okay so cookies might not be the ideal food choice for a food detox but it seemed like a good idea at the time and it made everyone in my house happy campers and what's better then that?  

What you will need:
  • 3/4 cup of almond butter
  • 1/2 cup of organic coconut sugar
  • 1 egg
  • 1/2 tsp of baking soda
  • 1/4 tsp of sea salt + a little extra for sprinkling on top
  • 1 cup of Enjoy Life Chocolate Chips 
Directions:
  1. Preheat oven to 350 degrees.
  2. Stir together the almond butter and the following 4 ingredients.  Once your batter is mixed together, stir in the chocolate chips.  
  3. Line 2 baking sheets with parchment paper and drop rounded tbs size cookies onto the sheet. 
  4. Flatten each cookie out slightly with the bottom of a spoon. 
  5. Sprinkle a tiny bit of sea salt on top of the cookies. 
  6. Bake for 13 minutes or until cookie edges are golden brown. 
  7. Let cookies cool and enjoy! 



These are my favorite cookies that I have posted about to date.  If you want to make a healthier cookie but do not want to feel like your taste buds are getting sabotaged you need to make these.

Recipe makes 24 cookies.

I love cookies made from nutbutter! I actually just posted some with sunbutter, except I forgot how they turn a nasty shade of green from the baking soda and sunflower seed combo :/ These look fantastic...definitely trying them soon. I just finished off your lemon poppyseed muffins, which are by far my fave paleo muffins to date!

Will these stick to the baking paper? Every other cookie recipe I've tried had stuck really bad ..Any ideas?

Kathy- I had no problem with them sticking to the paper at all :)

I made these this eve, but subbed in a chopped Theo 85% dark choc bar and they were delicious! Question- how should I store the leftovers- freezer or room temp in a sealed container?

These look delicious! I'm curious as to how these compare with cookies made with almond flour. I have a fabulous, fool-proof paleo choc. chip cookie recipe but it uses almond flour instead of almond butter. Any thoughts as to the difference?

Yummy! I used ultra smooth homemade almond butter, added an extra egg. I didn't have to push down with a glass prior to putting in the oven. So yummy! A chewy chocolate chip cookie, paleo style!

I've made these twice in the last week. They are SO good. I even cut down a tiny bit on the amount of coconut sugar and I feel guilty after eating these b/c they taste SO good. I'm doing a no grains, no sugar diet so I'm not even supposed to use the chocolate chips or coconut sugar, so I'm wondering how this would be with at least xylitol instead of coconut sugar. I actually tweeted you about this minutes ago. But wanted to let you know what a HUGE hit these are in my house!

I just made these... I cut the sugar to 1/4 C and the chips to 3/4 C to cut the sugar a bit (I'm a brittle diabetic). They are delicious! Thanks for posting!

I made these last night and had low expectations, honestly; based on the simplicity of the recipe. Turns out these were absolutely incredible! I made them soft-baked and they were delightful out of the oven just as well as the next day. So moist, rich and delicious. I couldn't believe how good they looked too, for paleo/GF cookies. Would re-do this recipe any day! Thanks so much for sharing this quick, easy and tasty recipe!

Linds, these are my favorite paleo cookies TO DATE, HANDS DOWN!
Being super-sensitive to nut flours, my body responds better to nut butters so these were perfect for Christmas cookies and then I started making them as an on-the-go snack and late night treat! Oh, and you've gotten me HOOKED on coconut sugar. I had never used it until I found your blog and now it's my favorite granulated sweetener. I even purchased the vanilla-infused kind...mmm. Perfect addition to any treat!

That reminds me...I need to make a new batch stat! Thanks for a great, easy recipe (the sea salt is my favorite part!)

These cookies are amazing. I've been making them for a long time and realized that I never left a comment saying just how much I love this recipe, they are super easy, delicious, and no-fail (I've accidentally messed them up a couple times but they always turn out great)! They are the best GF choc. chip cookie recipe I've ever tasted and my family agrees (I leave the salt off the top, just a family preference). My husband loves these soft baked and I like them more crispy/chewy around the edges. It's so awesome that we can have 2 different cookies with the same recipe! I use your almond butter recipe also, it's the best one I've found (I love adding a little coconut flakes to it too sometimes), and the instructions are clear and easy to follow. Thanks for the fabulous recipes. I'm all out of superlatives so I'll go now :)

I made these with 1/4 cup cacao nibs and 3/4 cup shredded unsweetened coconut. So good!
