This past weekend my husband and I went out for a little date. One glass of wine led to two, the conversation started getting all hot and heavy and...okay nothing crazy happened (sorry babe) but I came home and decided I
needed something sweet. The husband agreed. The cooooolest thing about eating Paleo (are you sick of that word yet?) is that once you know all of the ingredients that you can cook and bake with it makes coming up with desserts and meals that much more fun. This recipe is my own although there are many other ways and variations that you can make this EASY and delicious little treat.
What you will need:
- 3 tbs of almond meal
- 3 tbs of cocoa powder
- 2 tbs of honey
- 1 tsp of vanilla extract
- 1 egg
- a few dashes of salt
- a few (5) dashes of cinnamon. Sorry I suck and you can yell at me in the comment section but I did not measure this out exactly.
*Variation- I am a little embarrassed to say that I made two of these in one night (hey wine makes you hungry) and the second batch was made with 2 tbs of cocoa powder and 1 tbs of sunflower seed butter. SO good too!
Directions:
- Mix all of the ingredients together in a microwave safe mug.
- Microwave for 2 minutes.
- Enjoy!
This really should take you no longer than three minutes to make. 1 minute to whip up all the ingredients and two minutes in the microwave. Okay I know someone who thinks they are Mr. Smarty Pants is going to say how using the microwave is not "Paleo"... but I am pretty sure caveman used microwaves all the time :)
If you want to be romantic and get your cuddle on then this recipe makes two servings. But if you are selfish and do not like sharing your chocolate cake like me then it only makes one. You can decide.

I've noticed you use almond meal, etc. In a lot of your recipies instead of flour. Could you tell me the nutritional benefit of almond meal over whole wheat flour? I'm always up to trying out new things that may be healthier, but sometimes I'm a little scared to try it until I find someone who has used it!
Kristin B- there is so many benefits of using almond meal over wheat flour. Such as it is gluten free, low glycemic, has minimal impact on blood sugar, higher in fiber, healthier baking option for people with inflammation diseases such as diabetes (I am type 1), it is not processed and natural...and SOO many more! :)

I tried this today for a snack. It was really good! The only thing was that it was a little dry...maybe 2 minutes in the microwave was a little too long or maybe I can add a little coconut oil for moisture? Does anyone have any suggestions?
I made this and found it a little dry. So I tried it again - this time I added a little coconut milk and put it in the microwave for only 1.5 minutes. It was perfect! I guess microwave times vary. And I think the coconut milk helped too. Yum! Thanks!

I tried this with coconut flour and it came out a bit dry the first time. The second time I used coconut flour as well, but I added about 1/3 cup of milk (you could use coconut milk) and 2tbs of melted butter ( could use coconut oil or perhaps even avocado ) and I also added some semisweet chocolate chips. It was absolutely delicious! Thanks so much for this recipe. I love how quick, easy and mess free it is! :)

I made this the flavor was great te texture was dry. made it a 2nd time added a tlb of peanutbutter still tasty and still dry what to ad to make it moister??

I used a little extra agave nectar and added a swig of malibu coconut rum (not sure if this is part of the Paleo diet :-O but it was good! And I didn't do the entire 2 minutes, stopped it 3 secs shy of 2 minutes. My friend said that coconnut oil helps with the dryness.

Anyone without a microwave, I made this in the oven today. Same mix, put in an oven-safe dish. I cooked it at 350F for 24 minutes, which was a bit too long. I'll try 20 next time. At 15 it was still liquid-y.

I only cooked mine 60 seconds, and it came out perfect. The first night, I cooked it 1 minute 20 seconds, and it was too dry. I also added 1 tsp of coconut oil.
I just made this....dry, but totally relish! I followed the directions to a T and it was soooooo yummy! Next time I think I would reduce the cooking time to see if that would help with the dryness. However, it was so good and really hit the spot for something sweet. Thank you!!!

I made this an it was dry so I added a lil bit of almond milk to it after it cooked and that did the trick. Next time I will only cook it for a lil over a min
I've added 1/4 tsp peppermint oil and sprinkled some chocolate chips on top for a sort of frosting. Super yummy and less wasteful than baking a whole cake and eating a couple of slices.
Great and brownie like with the addition of a few chopped pecans. So easy to do so it is dangerous! But we all need the occasional treat, right?

After looking and trying the pumpkin pie and chocolate cake, I decided to experiment. I took the original chocolate cake mug recipe added 2 tps of coconut oil, 1 tsp of peanut butter, and a splash of heavy cream. I have to say, with the non- Paleo and fattening components I added, it was delightful. Moist, hot, sweet, and lots of different flavors. I then took it a step further and added some low-carb vanilla coconut buttercream icing I made yesterday. WHOO! that just put it over the top. Thanks so much for the recipe, I will love continuing to play with it.

Wow.. this is so good. I didn't have almond flour, so I put some raw almonds in a coffee grinder and wham-O.

I just made this [and just finished eating too! hahaa :p ] and it was delicious! Although I think next time I might need to make it in something wider and shorter or add some liquid as the top half was moist and amazing but as I reached the bottom it got drier and drier.. the bottom part was hard and dry :[ but the flavor was amazing! I made it with two tbls. of cocoa powder and one of almond butterr :D yumm!
Oh! And I thought I should add that the kitchen smelled so good! [it actually still does!] Didn't think it'll smell this good since it wasn't oven made, but wow oh my, if I weren't full from nibbling on the almond butter already I'd eat another one!

Tried this a couple of times. Here's how I like it best. It is moist, but not too chocolatety.
3 tbs of almond meal
2 tbs of cocoa powder
2 tbs of honey
1 tsp of vanilla extract
1 egg
a few dashes of salt
a few dashes of cinnamon
1 tsp coconut oil
1 tsp peanut butter
Mix well to spread out the peanut butter.
Microwave for 1.5 minutes in my 2450MHz microwave.
Flip the mug over and give it a tap.
Most if not all of the cake will pop right out.
Enjoy
I plan to make this for our Valentine dessert! Do you think it would fit into a ramekin? I made a different mug cake before and I know it would have but I would really like to stick to your Paleo recipe.
This came out really well using Carob powder for those that prefer it.
Carob is fairly sweet so if you use 4 tbs carob powder and only 1 tbs honey it comes out pretty good. You could even try all carob and no honey but I haven't yet. A tbs of raw cream will make it more moist.
i love this and make it all the time - perhaps too often. tonite, inadvertently, i left out the almond meal (note to self: try not to do things from memory!) but thought i had included everything. it came out really nice and fluffy and i think i may now prefer it without the almond meal!

Just tried it - I did 2 TB maple syrup instead of honey. Nuked it 30 seconds less (i.e. 1 min 30 sec) and it was dry - will nuke less next time. Good chocolate flavor though - I did an internet search for "paleo, easy, chocolate" and this came up.
This was great. Ran out of cocoa powder so I used the Enjoy Life choc chips instead. I used a bigger mug and 1 minute was perfect. ooey, chocolately goodness at the bottom. :)
Can't wait to try this! My former mug brownie recipe was made with refined flour, sugar, and vegetable oil. This sounds like a much healthier way to satisfy my ever-present chocolate craving!
I just made this and the first one was very dry and I didn't use all the honey. Made another and used all the honey and cooked for 1:35 and it is not near as dry.

I just made this almost exactly as the first recipe except I added about 1 TBS of coconut milk and cooked for only 1 min 30 seconds.. DEVINE.. will add fresh berries and raw milk whipped cream next time.. YUM

I've made a mug cake before, but it never came out this good AND it certainly wasn't paleo friendly!!!
Because I'm not crazy about the Omega-6's in the almond flour, as another poster suggested, I substituted coconut flour for the almond (same amounts), added 2 tablespoons of melted butter and 1/3 cup of milk. I did not add the cinnamon, because I'm not crazy about chocolate and cinnamon together. I had to cook it for about 3-1/2 minutes because it was still very wet in the middle on top after 2 minutes. This took care of the dryness problem. It was very moist and perfect! Will add homemade chocolate chips next time.

We don't have any almond flour, so I used all coconut flour. I added a teaspoon of coconut oil hoping to moisten it up, but it still looked too dry when I mixed it up, so a second egg did the trick. Two minutes in the microwave and perfect.
I did add a tablespoon or so of mini chocolate chips on top, but it doesn't really need it..

I did it mostly like yours:
3 Tablespoons of Almond Meal
2 Tablespoons of Carob Powder
2 Tablespoons of Honey
1 teaspoon of Vanilla Extract
1 Egg
Pinch of salt
3 dashes of Cinnamon
1 Tablespoon Almond Milk
1 Tablespoon Almond Butter
Mix well, put in greased coffee mug, microwave for 1:30 minutes. Perfect!

Try dropping a tbsp of nutbutter on top of it before you microwave, it's like a lave cake. I also would cut down the time to just over 1 minute.

Vegans/egg allergic -- you can make this with ener-g egg replacer. :) I did so and thought I'd share.
I made this with ener-g egg replacer and also threw in some blueberries. After about two and a half minutes in a microwave that tends to cook too quickly, the consistency was perfect. I was really surprised to find it was much too sweet for me! I took about three bites and had to put it down. This is strange as I used to chug Mountain Dews like no other, but maybe my low sugar lifestyle is catching up to me.

tried this recipe tonight and was very pleased with how rich it turned out. It was rich and not overly sweet. Way more satisfying than old-fashioned conventional cake. I had a little cashew creme (cashews, dates, coconut oil, salt) left over from another recipe that i used as a light frosting. Perfect!
Do you think I could turn this into a whole cake kind of thing? Idk, multiply the recipe by 10 and put it in a small cake pan? I'm just going to try!

I made the 2 Minute Pumpkin Pie a couple of weeks ago when I had some left over pumpkin puree and I remembered to look up your website when I had the hankering for something chocolate (about 10 minutes ago). The Chocolate Cake is currently cooling in the mug and I just realized I have everything to make the 2 Minute Blueberry Muffin for tomorrow morning. I added a scoop of Barney Bare Almond Crunchy Almond Butter and added some ground ginger for a little kick. Cannot wait to try this with sunflower seed flour!

I made this straight up despite the comments. OK I tossed in a few pecan pieces. I nervously watched the cake rise above the mug but never overflow. It was a good solid cake. I had no idea this could be done. I can see how some thought it was dry but it was perfect for me. I like baked things baked. I like the carob idea above and will try that. Seems like you also could press a few raspberries into the top before cooking and get a more fancy result. We'll see.

I made this as-is and it was good, but dry. I made it again today and added a dab of butter ( I am assuming coconut oil would do the same) and also a splash of peppermint extract....this time it was pretty close to perfect!!

OK so I just made this (second time in 1 week!).... and created "Fall" perfectness on a rainy Sunday!! So I did 1 Tbs of coconut flour, 2 Tbs cocoa powder, 1 1/2 tbs PUMPKIN!! a splash of both almond milk and maple syrup (along with all the other original ingredients) for a minute and a half in the microwave. Topped with dark chocolate chips- waited a few min to melt... and OMG this recipe is very dangerous and quick! The most moist cake I have ever had!! Thank you sooo much!
I made for first time, with a very little ginger powder instead of vanilla (I had no vanilla available in that moment) and sweetened cocoa powder (the only one I had) (and thus reduced to honey to only 1 tbs) and was really pleased with the result. Thank you so much!!!!

I made this tonight, after trying a coconut flour one last week. This is so much better. I did add a little kerry gold butter and a splash of coconut /almond blend milk and cooked 90 sec. I threw in some walnuts and 70%cocoa, chocolate chips. Wow, I'm a happy camper.
