Spinach Feta Cups

We went to a BBQ over the weekend and I wanted to bring something other than chips. Plus I have been eating pretty good lately and I wasn't about to wake up with the ole chip hangover.

We had a ton of frozen spinach in our freezer and it was about time it was put to good use.

What you will need:
  • 2 cups of frozen spinach
  • 1/2 cup of feta cheese
  • 1 garlic minced
  • 1 egg
  • 1 package of organic mini phyllo shells
Directions:
  • Preheat oven to 350 degrees
  • Mix egg, feta and garlic in a bowl
  • Defrost frozen spinach in a pot of warm water. Squeeze out excess water
  • Stir spinach into the mixture
  • Use a spoon to scoop about a tablespoon of the mixture into each phyllo shell
  • Bake for 8 minutes.

Even though Ian and I ate most of them before they actually made it to the BBQ they were a hit!


On a side note: I cant do anything (blog) without music. I think music can be so inspiring and motivating! I have Pandora on shuffle with Johnny Cash, Mumford and Sons, Jem, Mariah Carey's Holiday Mix (too early for Christmas music? No way) La Roux and Flogging Molly. Does music motivate or distract you?

Hi Lindsay! I got all excite when I saw those little phyllo cases, hoping you were going to tell me you made them and I could get the recipe. I don't think I've ever seen phyllo cases like that in our stores over here. What a great idea.

Ohhhhh! Music is my life Lindsay. It motivates to do anything. I've just added a 3 disc dance anthem megamix to my playlist. (It's this one: http://www.jbhifionline.com.au/music/pop-rock/wild-reunion-1996-2011/653421) I love anything from music from the 20's and 30's, 50's rock'n'roll (my favourite), 60's, 70's, 80's, 90's, 00's, country, rock'n'roll, heavy metal, classical. You name it. I'd say the only music I don't really like is death metal. Sounds a little the same to me. And Justin Bieber! LOL

Those phyllo cups are the best. I've done TONS of stuff with them. My sister recently stuffed them with Trader Joe's blue cheese - pecan dip and then put diced pears on top. OMG good.

I'm a music girl too, but I rarely listen to it when I'm on the computer. Clearly I need to bust out the Pandora more often!

In regards to listening to music it depends on the day. Some days I am easily distracted and other times I need the music to motivate me:)

Those look so delicious! My fridge is so bare right now - I was just trying to find anything to throw a fast lunch together with and there wasn't a [non-spoiled] veggie to be found! Sadness!

I love listening to music when I'm doing things - especially during meals. I can't stand to hear people eating. I was just speaking with my Teaching Exceptional Students professor about this - if there's any sound I can't control then it's all I can focus on. Even pencils scratching against paper. It's the most frustrating thing doing everything you can to focus on what's being taught when all I can hear is feet tapping, papers shuffling, cellophane crinkling! It's awful! But for some reason music buffers out all that and I can focus on whatever I need to be doing :)

I can't do anything without music either!!! I have it on at all times. The hardest thing for me to do is do my hair/makeup without music blasting in the background...it's virtually impossible! haha. These spinach cups look delicious!!!! What a fancy and healthy and delicious snack!
