Homemade Non Dairy Peppermint Creamer

One of my favorite things about the holiday season is all the delicious holiday creamers that fill up the dairy section at the grocery store.  Since I have completely cut out dairy (and have never felt better by the way) I decided my coffee still needs a little holiday flair.  Plus coffee without creamer is borrrrrring.  Unless you are a mountain man with a grizzly beard then you probably like creamer in your coffee too.  Even if you do drink dairy this is still delicious regardless and this is artificial flavor, artificial color and dipotassium phosphate free.  What's dipotassium phosphate?  I actually have no idea but it is an ingredient that is in the holiday coffee creamers and it sounds weird and terrifying. 




 What you will need:
  • One can of full fat organic coconut milk
  • 1 tbs of pure peppermint extract
  • 6 drops of all natural liquid stevia
Directions:
Mix all the ingredients together and you're done! 
Place in the fridge and it will last up to two weeks.

This was so good I wanted to drink it...instead of my coffee :)

nice one!I'm trying to cut out of dairy but sometimes I'll cheat with eggs and cheese =/ anyhow, my skin does feel better. I think all that milk was making my skin break out.

Wow! I wonder if you can use other flavors? I'm not supposed to have dairy either but I just need something for my coffee!

Thanks for the recipe, Lindsey! Question, tho. How do you get the canned coconut milk to be creamy? I've tried several recipes before and they're always clumpy and gross - then when I add to coffee, the globules never melt, either. Oh - and on the stevia - could I use the concentrated powdered stevia? Any reason why you use the liquid or is that just what you had on hand?

Yum Lindsay! I bet the coconut gives an extra dash of goodness in your coffee. If only I could drink coffee. :(

Susanna- I made sure to really whip it up with a fork once I added the two other ingredients. It is super creamy and not clumpy at all :) I definitely recommend liquid all natural stevia (with no other added ingredients. I discovered the concentrated stevia does not seem to mix well.

Thank you so much for posting all these dairy free recipes. I have had issues with dairy since I was a kid but I've not given them up completely in a long time. Your recipes have been helping me to build up the motivation to cut it out completely!

I've been using the So Delicious Coconut French Vanilla creamer... This sounds great though. I'll have to try it as soon as I've used the last of what I have :)

I am dairy free for as long as i'm nursing my 5 month old son. So I make my lattes with vanilla almond milk and LOVE them. I'll have to try this! However I have a weird dairy-free question...since i've been totally dairy and soy free now for 4 months I will say i don't feel remotely different (nor have I lost the remaining baby weight). I feel like that is odd that I don't feel ANY different. Does that just mean I'm personally not sensitive to dairy? I just wonder if I'll notice or feel anything when I start eating again it when i'm done nursing. I miss cheese!!!!

Yep, I'm a bearded mountain man. Although, I did have my first eggnog latte of the season today and it was soooo good.
I'm all over anything that uses coconut milk - used it for dinner last night - so I'm definitely trying this. It would make yummy hot chocolate for the kiddos too.

Dear Oklahoma, please open a TJ's! I have to give up dairy. :( My pregnant digestive system doesn't like. I'll probably still dabble in cheese, but creamer is on my definite list of can't as well all milks. So sad, but what perfect timing for you to post this! Sounds yummy!

it's like you read my mind? I have been using the SO delicious brand and it's great,but just read the ingrediants...hello...titanium dioxide for coloring? (mind you the color is white..)a little google search later come to find that it's unknown if it's really safe or not!
I will be making this since i am almost completely dairy free esp. my coffee!

Sounds really good! Can you make it using the Lite? or must it be full fat?

Dipotassium phosphate is phosphorus and potassium. It's a highly water-soluble natural salt used in non-dairy creamers to prevent coagulation.

Do you think you could do this with coconut cream or would it be too thick? I just bought a can of coconut cream from Trader's and I've been dying to use it for something yummy :)

Is this supposed to be 1 TBSP or 1 TSP of peppermint extract? Just did one TBSP and it seems like way too much?

I just made this! I mixed it in a .5L water bottle I had left over. I read the directions wrong and thought it was 1tsp, so I actually doubled it while making it to make it more pepperminty to taste, haha. I didn't have liquid Stevia so I used my Stevia/Raw Sugar baking mix to taste. My only problem is, to get my coffee to the lightness I like, it took like 1/4 of the recipe. It seems like a lot of calories and expense for only 4 servings. But the taste is great!

I'm lactose so no dairy in over 7 yrs. Miss cream in my tea (PA roots) and coffee. However, I'm not good on the flavor of coconut. Can I substitute or somehow mask the flavor of coconut? And can I use turbinado instead.
