Triple Berry Cobbler (Paleo)

Even though summer does not officially start for another month (thank you google) I have been dreaming about warm summer nights, BBQs, splish splashin in the pool, cold beers, fire pits and fresh triple berry cobbler.

Fruit cobbler is something that I have been making for the longest time.  In fact, it was one of the first desserts I ever made for my husband that did not suck.  My old recipe (not paleo or thigh friendly at all) was delicious but because I no longer eat cake mix and sticks of butter on the regular I decided to give an old favorite a new healthier twist.












What you will need:
  • 4 cups of berries ( I used fresh boysenberries/strawberries and frozen blueberries) 
  • 1 1/2 cups of almond flour
  • 2 tbs of coconut oil (melted)
  • 2 tbs of honey
  • 5-6 dashes of cinnamon (hate me in the comment section for not measuring exactly)
Directions:
  • Preheat oven to 375 degrees
  • Grease a 8x8 baking dish with coconut oil and spread berries evenly along the bottom. 
  • In a seperate bowl, mix together the almond flour, coconut oil, honey and cinnamon until you have a nice crumbly mixture.   If it seems a little too dry, add a little more coconut oil.  If it seems a little too wet, add a little more almond flour. Depending on how fine your almond meal is this can change things slightly, so adjust as needed.
  • Spread the crumb topping evenly over the berries.  Sprinkle a good amount of cinnamon on top.
  • Bake for 30-35 minutes or until top is lightly golden brown.
  • Enjoy!

This turned out amazing.  It had the perfect amount of sweetness and the crumbly topping was oh so good.  My husband (and toddler) ate giant bowls of it and asked if I could make it again soon, which is always a good sign.

YUM! This looks delicious and super simple. I only use almond flour for my go to chocolate chip cookie recipe because I don't typically love the flavor/texture. But it really is the perfect flour for a crumble topping. Trying this recipe this weekend. Looks super yummy!

My dear Lindsey, I love the recipes you post and the way you live your life. i will try this one but I will replace the honey because it should be eaten only raw. Heated honey (at more than 40 degrees Celsius) becomes toxic. Big hug!

GURL I never measure spices. Ever. You should see how I make granola. It's comical how I toss things together. guess what - it don't matter! Always comes out great.
Okay coconut oil. Is there anything more freakn amazing than coconut oil!? I have a serious obsession. I will definitely be making this THIS WEEKEND! :D XOXO!

I made this twice with blueberries and strawberries. I added 1/2 teaspoon of baking soda to the crust (to give the crust a bit more body), plus 1 tablespoon of vanilla extract. The final product was exponentially better after overnight refrigeration; the flavors really melded and developed.

Found this the other day and made it tonight. I fudged a bit and added a wee bit of sugar and a bit of oats on the topping. Was very yummy b/c it was still not overly sweet. Thank you!

I've made this 3 times in a week! It's delicious. I added some peaches to one and loved it! I found I like the topping on the stickier side before baking. I also cover it with a sheet of foil for a bit so the top doesn't get too brown. Thank you so much! This is also great for breakfast.

This tastes so good! My only issue was the berries turned into mush and it was runny. I used fresh blueberries (could they have been too juicy?) Or did I cook it too long? (I only cooked it for 25 min.) Thanks for anyone who has any tips! I think next time I will also add more crust for the top because it was delish!

This was awesome! I made it with frozen berries and paired it with one ingredient banana ice cream. It was delicious! I'm getting ready to make another batch using fresh berries.

It's in the oven. I used the frozen berries from Costco and a can of blueberry pie filling. Since we aren't too concerned with sugar at the moment, I sprinkled brown sugar over the berries. Thanks for the recipe!!!!!
