Mini Key Lime Pies (Paleo)

Key lime pie is my favorite pie ever, hand down.  The last time I had it was on my anniversary a few years back.  I have wanted to recreate it using Paleo ingredients for the longest time but since my track record with baking pies is not the best (hello soup pumpkin pie I am talking to you) I have resisted...until the other day.  I came across a recipe that required zero baking, which sounded like my kinda pie!  I made a few small changes and this turned out incredible and I don't use that word often.  I had to refrain from eating all the filling like pudding it was that good. 

What you will need for the crust:
  • 1 cup of unsweetened dried coconut
  • 1 cup of walnuts
  • a dash of sea salt
  • 7 dates (pitted)
What you will need for the filling:
  • 1 1/2 cups of mashed avocado
  • 3/4 cups of fresh squeezed lime juice
  • 1/3 cup of honey 
  • 1/2 cup of coconut oil
  • zest from one lime
Directions:
  1. Put all the ingredients for the crust into a food processor. Pulse until you have a nice paste like consistency and it can hold together. 
  2. Push the crust filling into the bottom of 8 silicone cupcakes molds or a pie dish.
  3. Set aside until they are ready to be filled. 
  4. Put all the ingredients for the filling into the food processor.  Pulse until everything is blended together and smooth.  Taste and make sure it is to your liking.  If you need to add more honey or limes do it at this point.  
  5. Pour filling on top of crust and place in the freezer until it has set. 
  6. Enjoy! 





      These did not disappoint and the husband ate and I ate every last one over the weekend (yikes).  If you make these please come back and let me know what you think!

      I never thought you could make unbaked pie crust before!! This recipe is really unique (like with the avocado) but it sounds and looks really good! :)

      Oooh yum! Wow, the avocado ingredient surprised me, but I bet with the lime and the honey it really tasted delish. I've actually made that crust before in a cooking class (so good)! And on the top we sauteed apples and cranberries in a little bit of coconut oil and sugar. So yummy! You can probably substitute the sugar for something else too. :)

      Made these for the paleo gang last week. They literally fought over these tasty bites of summer! Added two dates to the crust portion and used smaller silicone cups to make one dozen. Perfect dessert! Thanks delighted momma :)

      I've made these twice for my family now, they are sooooo delicious! Even my hubs, who balks at healthy food loved these, so thanks!

      The only changes I made were using my leftover pulp from my almond milk instead of the walnuts (I'm always looking for places to use that stuff)- perfect! And I made them in my mini muffin tin, made 24, so I didn't feel so bad eating 2 or 3 ;)

      I made these tonight and didn't care for them. I even put extra honey in them but it still just tastes like sweet avocado. :( I'm going to make the lemon bars in a couple of days. Hopefully I'll have better luck.

      I just made these for Mother's Day. They are amazing! My mother and mother-in-law are going to love them. I used almonds instead of walnuts. So awesome! I love avocado.

      For the poster who said it tasted like sweet avocado, you must not have added enough lime. I don't even taste the avocado. Just creamy sour lime and coconut.

      I made this for a baby shower, and they were a hit! I did make a few changes with the crust. Instead of walnuts, I used almonds, and added two more dates (a total of 9). I can't wait to try these again, and more of your recipes.

      PS. I found the liners at Bed, Bath & Beyond.

      The directions say to freeze them...are they frozen to set and then can be put in the refrigerator? Or are they meant as a frozen treat? They look so so yum!
