Low Carb Chocolate Chip Muffins

A cup of coffee and a warm muffin go hand in hand in my opinion. One unfortunate aspect about the everyday muffin is the fact that they are loaded with sugar and carbs, which can send you into a morning food coma a few hours later...blahh don't you hate it when that happens?

These muffins are not only deee-licious, but they are made without any flour and sugar. Instead, I used almond meal (a low carb flour substitute) and liquid all natural stevia (best thing ever). I used a basic low carb muffin recipe, but made a few tweaks to the recipe to make it my own and to make the muffins a little bit more moist.

What you will need:
  • 2 1/3 cups of almond meal
  • 2 tsp of baking powder
  • 1/4 tsp of salt
  • 4 eggs
  • 1/2 cup of water
  • 1/2 tsp of liquid stevia (you can find this awesome sugar substitute at your local health food grocery store)
  • 1/3 cup of gluten free chocolate chips (regular is fine to use if you can not find GF)
Directions:
  1. Preheat oven to 350 degrees.
  2. Mix together the dry ingredients first. Add wet ingredients and mix until they are all blended together.
  3. Place baking cups into muffin tray. Scoop enough muffin batter to fill each muffin tin about 2/3 of the way full.
  4. Bake for 15 minutes.
These are light, moist, SUPER low carb and the perfect little treat to have with a morning cup of coffee or tea. I may or may not have eaten 3 in one sitting ;)

hmmm...what exactly is stevia? I always shy away from using sugar substitutes because I'm not sure that they are all natural.

Do you know the actual carb count of each muffin? I would love to make these for my husband (who is also a Type 1 diabetic) but he wouldn't touch it without knowing how much insulin to give first. Thanks!

Made these yesterday. They are so good and reminded me almost of a corn muffin with chocolate chips. I added a splash of vanilla and subbed 1/4 tsp stevia with 1 Tablespoon of sugar. Oh, have you tried Honeyville Almond Flour yet? It's my favorite. Thanks for sharing a simple and great recipe!

What did I do wrong? Did you make your own almond meal for this recipe? I used store bought. The chips sunk to the bottom and they never really got dark in the oven. I am sad about this because I am pregnant and diabetic and want so much to have a yummy treat...

re-du home furnishings- oh no! So sorry they did not turn out. I used store bought almond meal. Sometimes over stirring can make the batter too watery-maybe try again and stir just enough to blend eggs into batter.

These are so yummy! Thank you for the recipe. I made them with a squirt of agave b/c I don't like stevia. Only problem is that my chips sank to the bottom. Wonder why?

Okay, I did a little math and answered my own question. I thought I would post here to help anyone else looking for the calorie count...

(note: I used regular semi-sweet choc chips. not gluten free)

In each muffin there are 175 calories and 5 carbs. Not bad at all! Thanks for the recipe!

Good Morning Lindsay! Thank you for a wonderful low carb muffin recipe. Tried them this morning and DELISH! Just wanted to give you my variation. I had a limited amount of almond flour so I used 1 2/3 cup almond flour and 2/3 cup ground flaxseed meal, increased the baking powder to 1 T and added 1/3 cup unsweetened coconut and 1 tsp vanilla for a variation. I used 12 stevia packets and increased baking time to 20 minutes. Thanks again for an awesome recipe!

I made these this morning. To avoid sinking chocolate chips, I put them in on the top after the batter was in the pan. I was stingy with them. Next batch I will use what's called for and sprinkle some on top. I may also add a little coconut oil for extra moistness. Thanks for a good, simple recipe.

Just had these for breakfast with my kids! Well, almost- I was out of chocolate chips, so I made them lemon-flavored, and I didn't have stevia, so I used agave nectar and then left out nearly all of the water. I was afraid they would be dry, because most coconut or almond flour recipes have coconut oil or melted butter in them. Honestly, I thought you left out an ingredient in the list! :) But they were wonderfully moist and delicious! All of my kids loved them!

These were a huge hit!! I am very new to low carb baking. We just found out that my 16 year old daughter is insulin resistant and so we are now embarking on a low carb diet. She is not happy about this and so I am trying to make some yummy low carb (low GI) treats and comfort food (like pancakes and pizza dough) that she will like. I made some yeast bread with almond flour and vital wheat gluten and it was a bust. I then tried these muffins and she loved them. Her younger sisters loved them too! They gobbled them up. I made them exactly as the recipe is written (with the stevia) but had to use regular chocolate chips since we didn't have GF ones. Thanks sooooo much and I can't wait to try more of your recipes!!!!

I made these with 1/2 cup of Splenda, as it's what I had on hand and I think they came out well. I did have to bake them a bit longer than directed though - about 18 minutes. Thanks for the recipe!
