Skinny Spaghetti

There is no denying that a delicious bowl of pasta is satisfying and delicious...but did you know that you can still have "pasta" without the carb overload?

Spaghetti squash is a delicious and healthy alternative that is high in fiber and low in calories. Once cooked the inside of a spaghetti squash looks just like pasta and you can make it however you would normally make a pasta dish.

There are several ways to cook a spaghetti squash. You can microwave it, bake it, boil it or crock pot it. I pierced it with a knife several times (if you don't pierce it you will end up with a squash explosion..yes this happened to me one time when I tried to microwave it) and boiled it whole for about an hour.

Once it has cooked and cooled, cut it in half and remove the seeds. Use a fork to scoop out the spaghetti. If you want you can bake the seeds just like you would with pumpkin seeds.

You can season it however you want! I used a little olive oil, feta cheese, diced tomatoes, basil, onions, salt and pepper.

One of the first meals I ever made when I moved into my own apartment was Betty Crocker's stuffed spaghetti squash. I was carrying it to the table where my boyfriend at the time was sitting, and the platter slipped out of my hands and onto the floor. Spaghetti squash went EVERYWHERE. That was more than 15 years ago. I haven't made it since.
I think it's about time 'cause this looks delicious.

I make this often although my husband isn't a huge fan. I love that it has virtually the same texture as pasta but way less carbs!

Okay so I have to say that I have had spaghetti squash as a pasta dish before and was horrified. I am Italian, so it is hard to substitute pasta frankly in my opinion. However, I like that you just used olive oil, fresh tomatoes and basil. This sounds yummy actually. The way it was made for me was with a real tomato sauce, and I think it just threw me off too much. This one looks worth a try! :)

EHEM. (That was me clearing my throat for your attention as I am absolutley BAMBOOZLED by this dish). Soooo I'm beyond curious what it tastes like? What DOES it taste like? Oh gosh. The thought that I could have something similar to pasta, without the bloat / calories (I'm super health concious) excites me to no end, and can't believe that you have just shared this (no of course I can believe you are the one to share this, thus why you're my favourite blogger!) haha. I literally dreamt about this last night and think I would flavour it the same. Maybeeee put some chorizio in there? I'm off to my fruit and veg store after work to buy it to try this weekend! I cannot stand spaghetti [It's just about the only food that I vehemently do not like] but I love spaghetti squash!

what I have done in the past, instead of not scraping the seeds out after, just cut in length ways scrape the seeds (which are delicious toasted btw) flip it upside down or a cookie sheet. The spaghetti squash actually steams this way. So easy!

Can I be honest here? I have seen spaghetti squash at Trader Joes a hundred times and NEVER knew what the inside looked like, let alone how to cook it. I've been craving pasta like a champ during my pregnancy, and am definitely going to try this!

I am so obsessed with spaghetti squash, have eaten it last few days in a row with tomato sauce, kale and white beans! Of course lots of red pepper and parm cheese :)

It can also be eaten raw. Just cut it open, scoop out the seeds and use a sturdy fork to scrape out your "spaghetti". I like to make a raw sauce to go with it using tomato, garlic, onion, and a variety of herbs and such in the blender on the salsa setting. Delicious and healthy.

I often make this squash. I have been on a new life eating plan 2 1/2 years. Lost 150 lb as I am diabetic, carbs. are a no no for me. I encourage even those who have never tried this. Enjoy your vegetables!

Bakes at 375 for an hour.
I made this tonight, my second time ever eating spaghetti squash! I followed recipe above and added a little balsamic vinegar and toasted walnuts. It was really good!! Thanks Lindsay!

Mine turned out delicious! Only thing was my squash was a little crunchy. Should I have cooked it a little longer maybe or is it supposed to be like that? I have never cooked spaghetti squash before.
