No Bake Fruit and Nut Bars

This recipe was inspired by my almost daily KIND bar obsession. They are amazing all natural energy bars. I am the type of person who always reads the ingredient labels of whatever I buy. I realized that these would not be that hard to make yourself. So I came up with my own little version.

What you will need:
  • 1 1/2 cup of assorted nuts
  • 1 cup of unsweetened dried cranberries
  • 1/2 cup of Honey
  • 2 tablespoons of coconut butter
I read that the best way to get everything evenly chopped up and blended together was to use a food processor. We HAVE one. We got one for a wedding present. It was still in the box and has never been opened...until the other day. I was SO excited to use my super nifty little chopper helper. I pulled every thing out and started reading the directions and thought, "Screw it this is WAY too confusing." I put it back in the box and did the ole chop everything up with a hammer method. Worked like a charm :)


Once all the nuts are nicely chopped (hammered) up, add the cranberries and honey. Blend everything together.

Stir in 2 tablespoons of coconut butter. This stuff is SO good for you by the way.

Evenly distribute the mixture and store in the refrigerator until it has hardened.

Cut up your little bars and enjoy!

Oh and I get those emails all the time too! Sometimes it's from a random prince or princess too - so weird!

Wow looks good and love that it is no bake. No heating that oven in the middle of a hot summer:) I get those crazy emails too. The sad part is as ridiculous as it looks to us there are still people out there who fall for that:(

Get out of my head! I was just thinking, "Man, I'm always on the go, and I would love to have some kind of home-made, delicious, cereal-ish bar, like elves carry on long treks for energy." Actually, don't get out of my head cuz then I can't have super-spot-on/eerily well-timed advice/recipes like I do get from you.
When I make this, which I most certainly will very soon, I'll take pics and credit you.

Question 1: What's so good for you about coconut oil? My aunt puts it in an egg white mixture for a morning shake but it looks scary fattening to me.

Question 2: Do you have a recommendation for a cleanser for someone who doesn't wear makeup (i.e. my 11 year old sister?)

Rachael- hahah!! You crack me up girl! Coconut butter is rich in lauric acid, which boosts immunity and destroys harmful bacteria and viruses. It has a ton of other health benefits but I don't want to bore you ;) Here is a good link..

First of all, I am totally with you on the hammer method!!! So much better than any fancy contraption :). And how funny about the random emails you're getting! So bizarre!! I'm glad to hear you aren't giving that fake email in Zimbabwe all of your bank account information :). Most importantly though, those bars look delicious! And really healthy too! Thanks for sharing this simple, fun recipe. :) Nice photos. I never tried the store-bought fruit & nut bars, but I got turned on to making them, so I've been peeking at helpful blogs like yours. ;)

I just tried this with a 5oz box tropical fruit mix, orange peel of 2 navals, 1/2 cup white chocolate chips, 1/4 cup each of almonds & cashews. It came to roughly 2 1/2 cups of mix-ins. Then I added honey - about 1/4 cup - and about 1T of natural peanut butter because I don't have coconut butter. The mixture felt very wet even with half of your sticky ingredient ratio, so I was afraid to add more. Also added a sprinkling of cinnamon.

My mixture is chilling right now. I hope it slices up as nicely as yours did. If not, I'll have to eat it with a spoon again, and be careful with the portion size.
