I usually fry up some chicken tenders - NO flour, just some spices over the chicken, in melted butter - and the leftover bits at the bottom of the pan I add some chicken stock. Scrape the bits and let this reduce a bit. I then add some cream cheese. Use a whisk... it will look awful at first, but keep whisking. Add some heavy whipping cream and whisk until smooth. You can do the same thing when you fry up a steak, just use beef stock instead of chicken. I also add in a slice of good quality sharp american cheese to thicken it up for both gravies.
