So, I googled coconut sugar and found that the flower that produces a coconut is where the sap is taken from to make the sugar. Once the flowers on a palm plant are used up, that plant will no longer produce coconuts. That's sad. A lady at my work actually started talking about Coconut sugar only a few weeks ago and brought some in to work to make us try it in our coffees (we all drink to much coffee at my job) - and it was great!
