I used 1/2 the amount of baking soda and no salt because the soda taste has been so strong in these types of recipes and I don't like the taste that gives off, and it worked out just fine. It did have an egginess to it, but it was so delicious. I've changed the flour / meal - almond/ rice/ hazlenut/ coconut/ cornmeal or combinations of the above. I've changed the fruit - mashed banana, applesauce, strawberries. My all time favourite is Choc-Hazlenut Strawberry Muffin <br />1 tbsp almond meal <br />1 tbsp hazelnut meal<br />1 tbsp rice flour<br />1 tbsp cocoa<br />1/2 tsp of baking powder <br />pinch of salt <br /><br />3 tbsp of diced strawberries<br />2 tbsp of unsweetened applesauce <br />1 tbsp of agave nectar <br />1 egg <br />1 tsp of vanilla <br /> <br />Combine the dry ingredients in a microwave safe bowl. Lightly coat the strawberries with dry ingredients and set aside. Add wet ingredients and mix well. Gently stir thru the coated strawberries.
